Classic Box Recipes for Delivery Week Commencing 25th June

We're so used to seeing lentils dried or in tins that it only occurred to us the other day to wonder what a lentil plant looks like. Not dissimilar to a pea plant it turns out, but bushier. Here we've put these lovely legumes in a spicy, creamy sauce which pairs perfectly with pan-fried chicken. Beautiful!

The key to this dish is gently roasting the cherry tomatoes and peppers to bring out their natural sweetness and then balancing this against salty olives and mild, creamy mozzarella cheese. We’ve made it super quick and easy, to leave more time for putting your feet up!

Our chef André has created this tasty lamb pilaf and given it a hearty boost with the addition of lentils. The type of fibre found in these lovely little legumes has fantastic benefits for heart and digestive health, as well as keeping blood sugar levels stable. Our Spice of the Month is Sri Lankan Curry Powder and to celebrate, our Head Chef Patrick is currently on a Sri Lankan adventure. This week he made it to the southern coast where he met the local stilt fishermen. As he cooked this curry on the beach the tide came in and threated to wash his makeshift kitchen away! This is a veggie version of feijoada, the national dish of Brazil which is a rich stew of pork and black beans. Its name comes from the Portuguese word for bean, 'feijão' so we've given it a HelloFresh twist by letting the beans take centre stage and leaving out the meat altogether. We call it 'veijoada'! Today we're making a colourful Asian stir-fry with a surprising secret ingredient: ketchup! It brings a delicious sweet and sour note and is actually used by lots of Chinese restaurant chefs!

Way back in the 18th century, French, Spanish and African settlers all congregated in America's Deep South. They pooled their culinary heritage and Cajun food was born! Inspired by this history of cultural combination, we created a dish that combines hot-and-sweet Cajun spiced cod with a cooling avocado crema and some beautiful speciality tomatoes from our friends at the Tomato Stall on the Isle of Wight.
