Have you come across dukkah before? It's a traditional Egyptian-style mixture of roasted nuts, sesame seeds, thyme and spices. It's fabulous mixed with olive oil as a dip for bread or as a seasoning, sprinkled over salads, meat or vegetables. Here it goes beautifully with sweet potato, turning them into the perfect accompaniment for pan-fried chicken.

Swedes really do originate from Sweden! We can only assume that imaginative vegetable naming wasn't high on the priority list the day they arrived here. Americans call them 'rutabaga' which actually comes from the Swedish for 'red bags'. And the Scots consider them to be turnips or 'neeps'. Whatever you call them, they are absolutely delicious when mashed with butter and make a fine side dish for oven-baked sausages. Enjoy!

Risotto is so delicious, but the prospect of all that stirring can sometimes be a bit daunting. Chef André to the rescue! He's simplified the process and created this recipe that lets you just put your risotto in the oven and forget about it until it's time to eat. All the creamy, luxurious texture with none of the elbow work!

Ras-el-Hanout is a spice mixture used throughout North Africa. Literally translated, the name means 'top of the shop'. Kind of like our 'top drawer' - the best each spice seller has to offer. No two merchants have quite the same blend but ours contains chillies, rose petals and ginger amongst other deliciously fragrant things. It brings fabulous aromas and flavours to this stew. Enjoy!

A recipe for enchiladas appeared in Mexico's first ever cookbook, which was published way back in 1831! This is our version of the traditional favourite. Mashing up the beans gives a creamy consistency that we think you'll love. Arriba!

Have you ever tried cooking a radish? It mellows their peppery bite and makes a delicious change from having them raw in a salad. They make a tasty and colourful side for sirloin steak. We've finished everything off with a buttery herb sauce for a touch of richness and decadence. Enjoy!
