  1. Taste as you go When adding basic seasoning like salt, sugar or pepper, always taste as you go. A good rule for savory recipes is to add a pinch of salt every time you add new ingredients.

  2. Herb time Add dry herbs at the beginning and fresh herbs at the end. Dry herbs take a while to develop their flavor in a dish, while fresh herbs taste best as they are, so stir them in at the end or even after cooking.

  3. Prep first It’s no surprise that cleaning, chopping and measuring all of your ingredients before cooking is a smart idea. Keep your prepped ingredients in different bowls or boards so you can access them easily and avoid having to stop and prepare mid-recipe.

  4. Add acid If your meal is tasting a little flat, try adding some lemon juice or a splash of vinegar. The sourness will add depth to your meal, competing with bitter flavors and brightening others.

5 Facts About the Scotch Egg

This rich British recipe is a patriotic snack that traditionally comes served as a hard-boiled egg covered in a layer of sausage meat, then fried with a coat of breadcrumbs. It’s a versatile, protein-rich bite that has created a great debate over its origins and adaptations to the recipe.

They’re not Scottish! There are many theories about where the Scotch egg was first founded, but one thing is for sure – it’s not from Scotland. It’s commonly said to have been created in an upscale London department store in the mid 18th century as a snack for travellers going through Piccadilly Circus. This British recipe originally called for the egg to be covered in a creamy fish paste instead of sausage meat, and gained the nickname ‘Scotties’. It’s not just a British thing. Many cultures have their own version of the Scotch egg, like the Persian Nargisi Kofta which is wrapped in lamb mince and served with a brown, yoghurt-based gravy. After a recent rise in popularity, there are many modern versions of this salty British snack, like a gourmet Scotch egg served in a cone of maple bacon or a vegan version made with avocado and mustard. The record for the largest Scotch egg is held in London and was made using a 1.7 kg ostrich egg, 4 kg of sausage meat, 940g of haggis and 800g of breadcrumbs. It took more than eight hours to cook the monstrous snack.
