Smashed Avocado
a) If you don't have a toaster, preheat your grill to high.
b) Heat a drizzle of oil in a medium frying pan on medium-high heat.
c) Once hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side. Transfer to a plate lined with kitchen paper. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
a) Meanwhile, halve your ciabatta and grate the cheese.
b) Toast in your toaster until golden. Alternatively, grill on the top shelf until golden, 2-3 mins.
a) Spread the bases of your toasted ciabatta with the smashed avocado, then top with the crispy bacon.
c) Layer the cheese over the bacon, then sandwich on the ciabatta lids to finish.
