Instructions

1

a) Preheat your oven to 220°C/200°C fan/gas mark 7.

b) Crack the egg for binding (see pantry for amount) into a medium bowl, then whisk the egg until combined and season with a pinch of salt and pepper.

c) In a separate medium bowl, combine the breadcrumbs and the oil for the breadcrumbs (see pantry for amount).

a) Cut each chicken breast into 2cm strips. Season with salt and pepper, then add to the bowl of egg and mix to coat well.

b) Pop the chicken pieces into the breadcrumbs, toss to coat, then transfer to a baking tray.

c) Bake on the top shelf of the oven until cooked through, 20-25 mins. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. It's cooked when no longer pink in the middle.

a) When the chicken has 10-15 mins remaining, lay the bacon in a single layer onto a lined baking tray and bake on the middle shelf of your oven until golden brown and crispy, 10-15 mins. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.

a) Meanwhile, combine in a medium saucepan the hot sauce (add less if you'd prefer things milder), honey and butter (see pantry for amount). Stir on medium heat until melted, 1-2 mins. TIP: If your honey has hardened, put the sachet in a bowl of hot water for 1 min to loosen.

b) Cover to keep warm and set aside for now.

a) Warm 4 waffles by popping them in the microwave for 30 secs. If you're using the oven, pop the waffles onto the baking tray and into the oven to warm through, 2-3 mins. TIP: Keep the remaining waffle for another recipe

a) Once everything is cooked, divide the rocket between 2 serving plates. 

b) On top of the rocket, stack 2 waffles per plate.

c) Top the waffle stacks with the breaded chicken and bacon rashers.

d) Finish with a drizzle of the hot honey sauce.
