Instructions

Make the Custard
1

a) In a small saucepan, combine the creme fraiche, sugar and half the maple syrup with the butter and milk (see pantry for both amounts).

b) Stir on medium heat until the sugar has dissolved and the butter has melted, 3-4 mins.

c) Pour the mixture into a large bowl and set aside to cool, 5 mins.

Add the Waffles

a) Meanwhile, quarter each waffle into 4 equal squares.

b) Once the custard has cooled, add the eggs (see pantry for amount), then whisk to combine.

c) Add the waffle quarters to the custard and mix to combine. Cover and pop into the fridge, then leave to soak for at least 30 mins, or ideally 40-60 mins.

Fry the Bacon

a) Meanwhile, heat a drizzle of oil in a frying pan on medium-high heat.

b) Once the oil is hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side.

c) Transfer to a plate lined with kitchen paper and leave to cool. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.

Preheat the Oven

a) When the waffles have 10 mins of soaking time remaining, preheat your oven to 200°C/180°C fan/gas mark 6.

b) Once the bacon has cooled, chop into bite-sized pieces.

Into the Dish

a) Once the waffles have finished soaking, carefully lay each waffle piece vertically in an ovenproof dish, popping a few blueberries and bacon pieces between each layer.

b) Pour any remaining custard over. Sprinkle over any remaining blueberries and bacon.

c) Pop the tray onto the middle shelf of the oven and bake until set and slightly crisp on top, 18-20 mins.

Serve Up a Festive Treat
6

a) Once baked, drizzle over the remaining maple syrup. 

b) Share the waffle bake between serving plates and tuck in.
