Warm Winter Jumble and Apple Walnut Vinaigrette

with Goats Cheese Croutons, Roasted Potatoes and Green Beans

Preheat your oven to 220°C/200°C fan/gas mark 7. Chop the potatoes into 2cm chunks (no need to peel).

Pop the chunks onto a large baking tray. Drizzle with oil, season with the roasted spice and herb blend, salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary. When the oven is hot, roast on the top shelf until golden, 25-35 mins. Turn halfway through.

Boil a half-full kettle. Pour the boiled water into a medium saucepan with 0.5 tsp salt and heat on high.

Meanwhile, trim the green beans, then cut into thirds.

Bring it back to the boil, then add the beans and cook until just tender, 4-6 mins. Drain in a colander, then return to the saucepan. Season with salt and pepper. Toss in olive oil.

Meanwhile, halve the ciabatta. Spread the goats cheese onto the cut halves, and drizzle with the honey (see pantry for amount). Season with some salt and pepper.

Pop the ciabattas on the middle shelf until golden, 8-10 mins, then remove from the oven and set aside.

Quarter, core and finely chop the apple (no need to peel).

Pop the apple into a bowl and stir through the walnuts, mustard, cider vinegar, olive oil (see pantry for amount), season with salt and pepper. Set aside - this is your dressing.

Whilst everything is cooking, have a clean. 

Cut the cheesy ciabatta into roughly 2cm chunks.

Once everything is ready, toss the roasted potatoes, green beans and half the croutons into the dressing.

Share the warm winter jumble into your plates.

Finish with a scattering of the remaining goats cheese croutons.
