Instructions
a) Halve the avocado and remove the stone.
b) Use a tablespoon to scoop out the flesh into a bowl. Mash with a fork. Season with salt and pepper.
a) Cut the seeded rolls in half lengthways.
a) Spread the mayo on the lids of the rolls, then spread the mashed avocado on the bases.
b) Top the avocado with the cooked chicken slices.
c) Lay the Serrano ham on top of the chicken, then sandwich on the lids to finish.
