Instructions
a) Zest the limes.
b) Remove the pistachios from their shells, then roughly chop.
c) Set aside 1 tbsp of pistachios in a small bowl for sprinkling over at the end.
a) Place a small saucepan of water on high heat.
b) Pop the chocolate chips into a large heatproof bowl. Once the pan of water is boiling, reduce the heat to medium and pop your bowl of chocolate over the pan (be careful not to let the bottom of the bowl touch the water underneath).
c) Heat until the chocolate has melted, 4-5 mins, stirring occasionally. Remove from heat.
d) Add the lime zest, pistachios and granola. Mix to combine.
a) Spoon the mixture, 1 tsp at a time, onto a lined baking tray, into bite-sized chunks. You will make approximately 15 truffles in total.
b) Top each bite with a sprinkle of the reserved pistachios, then place into the fridge to firm up, 40-50 mins.
c) Once firm, store your truffles in an airtight container and consume within 3 days.
Enjoy!
