Due to the war in Ukraine, it has been necessary to substitute sunflower oil with rapeseed oil in some products without a label change. The FSA have advised that allergic reactions to rapeseed oil are rare.

a) Zest the lime.
b) Remove the pistachios from their shells, then roughly chop. Set aside 1 tbsp of pistachios in a small bowl for later.
c) Place a small saucepan of water on high heat.
a) Pop the chocolate into a large heatproof bowl. Once the pan of water is boiling, reduce the heat to medium and pop your bowl of chocolate over the pan (be careful not to let the bottom of the bowl touch the water underneath).
b) Leave until melted, 4-5 mins, stirring occasionally. Remove from heat.
c) Add the lime zest, pistachios and granola. Mix to combine.
a) Spoon the mixture, 1 tsp at a time, onto a lined baking tray, into bite-sized chunks. You will make approximately 15 truffles in total.
b) Top each bite with a sprinkle of the reserved pistachios, then place into the fridge to firm up, 40-50 mins.
c) Once firm, store your truffles in an airtight container and consume within 3 days.
