Why Escondido? Puerto Escondido (or 'hidden port') is a fun little beachy area in Mexico, much loved by surfers and filled with all sorts of great beach hut restaurants. This tasty little dinner is inspired by one such sun drenched little shack and has all the zingy flavours you would expect from Mexico, with a nice crunchy twist. Add the chipotle and the jalapenos to taste (they're a bit hot!) and wash down with something icy cold.

*Make sure you cook the rice the night before to make it super quick the next day!

Boxes and ingredients are packed in facilities that handles Peanut, Nuts, Sesame, Fish, Crustaceans, Milk, Egg, Mustard, Celery, Soya, Gluten and Sulphites. Due to the conflict in Ukraine, it has been necessary to substitute sunflower oil with rapeseed oil in some products without a label change.
