Honey Gochujang Pulled Chicken Rice Bowl
with Sesame Broccoli and Crispy Onions

Instructions
Preheat your oven to 220°C/200°C fan/gas mark 7.
Pour the water for the rice (see pantry for amount) into a medium saucepan with a tight-fitting lid.
Stir in the rice and 0.25 tsp salt and bring to the boil. Once boiling, turn the heat down to medium and cover with the lid. Leave to cook for 10 mins, then remove the pan from the heat (still covered) and leave to the side for another 10 mins or until ready to serve (the rice will continue to cook in its own steam).
Remove the chicken from the packaging and place in an ovenproof dish along with the juices.
Roast on the middle shelf of your oven for 20-25 mins. IMPORTANT: Ensure the chicken is piping hot throughout.
Halve any thick broccoli stems lengthways.
When the chicken has 10 mins remaining, heat a drizzle of oil in a medium frying pan on medium-high heat.
Once the oil is hot, add the Tenderstem® and stir-fry for 2-3 mins. Add a splash of water, then cover with a lid (or foil) and allow to cook until tender, 4-6 mins more. Season with salt and pepper. Add the sesame seeds to the pan and toss to coat, then remove from the heat.
Once cooked, remove the chicken from the oven, reserving 1 tbsp of cooking juices per person, then discard the foil and any remaining cooking juices. Use two forks to shred the chicken as finely as you can
Stir through the gochujang, honey, soy sauce and reserved cooking juices until combined.
Fluff up the rice with a fork, then share between your bowls.
Top with the gochujang chicken and sesame broccoli.
Sprinkle over the crispy onions.
