
Blueberry and Honey Bacon Pancakes
with Creme Fraiche and Berry Compote | Serves 2
This pancake stack combines sweet and savoury for the perfect brunch. Get stacking with creme fraiche, berry compote and tasty blueberries. Then top these thick, fluffy pancakes with honey coated crispy bacon, almonds and a decadent drizzle of honey.

Instructions
Preheat your oven to 220°C/200°C fan/gas mark 7.
Heat a drizzle of oil in a large frying pan on medium-high heat.
When hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
While the bacon cooks, pop the pancakes onto a baking tray and into the oven to warm through, 2-3 mins.
When the bacon is cooked, transfer to a plate lined with kitchen paper.
Discard the kitchen paper once it has soaked up some of the excess oil, then drizzle over half the honey and turn the bacon so it's nicely coated. TIP: If your honey has hardened, pop it in a bowl of hot water for 1 min.
Cover to keep warm.
When the pancakes have warmed through, start to build your stack!
Spread the creme fraiche evenly over each pancake, then add a dollop of red berry compote to each one.
Using a teaspoon, gently swirl the creme fraiche and compote until ripples form. TIP: You don't want to mix them together completely, so be gentle.
Scatter some blueberries over each pancake, then lay one on top of the other, creating 2 stacks (1 per person).
Share the pancake stacks between 2 serving plates, then top with the honey coated bacon.
Scatter over the toasted almonds and drizzle over the remaining honey to finish.
