a) Preheat your oven to 190°C/170°C fan/gas mark 5.
b) Line an 8''/20cm square cake tin.
c) In a large bowl, combine the cookie mix and water (see pantry for amount), then mix to combine fully.
d) Pop the mixture into your lined tin and gently press to the edges.
e) Bake on the middle shelf until crisp and lightly golden, 20-22 mins.

a) Meanwhile, combine in a medium saucepan the condensed milk, Baileys caramel sauce, butter and the salt (see pantry for amount).
b) On medium heat, constantly stir the condensed milk until the mixture is thickened and has started to bubble, 10-15 mins. TIP: Your mixture is ready if you run the spoon through the middle of the pan and the mixture takes 2-3 seconds to come back together. ATTENTION: Be careful, as the mixture will be very hot.
c) Once the cookie base is baked, pour the caramel mixture over the cookie base. Allow to cool for 10-15 mins before popping into the fridge to cool fully.

a) While the caramel cools, melt the milk chocolate chips in a small saucepan on medium heat, 2-3 mins.
b) Once melted, pour the chocolate over the top of the caramel.
c) Carefully place half the white chocolate chips on the top of the melted milk chocolate, arranging them to spell out '2025' on top.

a) In another small clean saucepan on medium heat, melt the remaining white chocolate chips, 1-2 mins.
b) Spoon small blobs of the melted white chocolate onto the melted milk chocolate layer, avoiding the '2025' in the middle.
c) Using a toothpick or small knife, drag the white chocolate in multiple directions from its centre to resemble a firework.
d) Pop the Baileys caramel cookie bites into the fridge until fully set, 2-3 hours, before cutting and serving.
