Instructions

1

a) Preheat your oven to 200°C/180°C fan/gas mark 6. Remove the filo pastry from the fridge and its packet to bring it to room temperature.

b) Halve, peel and thinly slice the onion.

c) Heat a drizzle of oil and a knob of butter (if you have any) in a medium saucepan on medium heat. Once hot, add the onion , season with salt and pepper and fry, stirring occasionally, until golden and softened, 8-10 mins.

d) When the onion has 5-6 mins left, add the beef mince. Fry until the mince has browned, 5-6 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince.

e) Add the tomato ketchup (see pantry for amount) and cook until caramelised, 1-2 mins more, then remove from the heat.

a) Halve the filo pastry sheets to make squares, then lay flat on the counter, covered with a damp tea towel.

b) Grate the cheese.

c) Place a filo square in front of you, like a diamond with one corner pointing at you. Add ?? tbsp of the filling one-third up from the bottom, then sprinkle over some cheese. Fold the bottom corner over the filling to make a tight cylinder, then fold the left and right corners over the filling.

d) Roll away from you, stopping before the far corner. Brush the far corner with a little water then finish rolling to seal. Pop the spring roll onto a lined baking tray, seam down, then repeat with the remaining filo and beef mixture.

a) Brush the top layer of the pastry with olive oil and bake on the top shelf of your oven until crispy and golden, 10-12 mins. 

b) Once baked, pop the cheeseburger onto your serving plate alongside the burger sauce for dipping.
