a) Preheat your oven to 200°C. b) Pop the cauliflower florets into a mixing bowl. Season with salt and pepper and stir in the hard Italian cheese and half the mayonnaise. c) Make sure the florets are well coated. d) In another small bowl, mix the panko breadcrumbs with half the Central American spice mix. Tip: Use less spice if you're not that keen on the heat! Season the crumbs with salt and stir in a glug of oil. e) Tip the crumbs onto the florets and toss to coat evenly.

a) Carefully transfer the florets to a baking tray lined with baking paper and roast on the top shelf of your oven until golden and crispy, 20-25 mins. b) Discard any crumbs that are left in the bowl. c) Whilst the cauliflower roasts combine the remaining mayo in a small bowl with the chipotle paste (add less chipotle paste if you don't like heat). d) Mix together to combine.
