
Welcome in the first new moon of the New Year with recipes inspired by traditional festival feasts. Sweet and savoury come together perfectly with these chicken skewers. Easy to make and delicious to eat, these peanut coated chicken satay skewers make for a tasty addition to meals.

a) Preheat your oven to 220°C/200°C fan/gas mark 7. Boil a small amount of water in the kettle.
b) Soak 4 skewers in cold water (this will prevent them from burning).
c) Peel and grate the garlic (or use a garlic press).
d) Zest half the lime, then slice it in half. Juice half the lime into a large bowl and set the zest aside for later. TIP: Keep the remaining lime and skewers for another recipe.

a) Cut each chicken breast lengthways into 3cm chunks and add to the bowl of lime juice. Add the garlic and season with salt and pepper, then mix to combine.
b) Thread the lime chicken pieces onto 2-4 skewers and transfer to a lightly oiled baking tray.
c) Roast on the middle shelf of your oven until cooked through, 15-20 mins IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. It's cooked when no longer pink in the middle.

a) In the meantime, combine in a medium bowl the peanut butter, sweet chilli sauce, soy sauce and 1 tbsp of boiled water. Stir until smooth.
b) When the chicken skewers have been in the oven for 8-10 mins, drizzle over half the satay style sauce and return to the oven for the remaining cooking time.
c) Meanwhile, crush the peanuts in the unopened sachet using a rolling pin.
d) Once cooked, place the skewers onto your serving plate and sprinkle over the lime zest and crushed peanuts.
e) Serve the remaining satay style sauce on the side for dipping.
