Bedouin Chicken

with Ginger Rice and Courgettes

For this uplifting little recipe, we’re turning our hand to a bit of dry-roasting. Peanuts, coffee and chocolate all benefit from using the technique, but doing it at home takes no effort at all. Dry-cooking your spices in the pan will actually alter their chemical structure and enhance their flavour. Forget the science stuff though; once you grind the spices up your kitchen will be filled with a warm, heady scent befitting of a Bedouin camp fire. Camel not included.

Boxes and ingredients are packed in facilities that handles Peanut, Nuts, Sesame, Fish, Crustaceans, Milk, Egg, Mustard, Celery, Soya, Gluten and Sulphites. Due to the war in Ukraine, it has been necessary to substitute sunflower oil with rapeseed oil in some products without a label change. The FSA have advised that allergic reactions to rapeseed oil are rare.
