a) Zest the orange, then set aside the orange for the final step.
b) Combine in a medium saucepan the ricotta cheese, chocolate chips, orange zest (use less if you prefer things less citrusy) and 0.25 tsp salt.
c) Stir on medium heat until the chocolate has just melted, 2-3 mins.
a) Pop the ice cream mixture into a large bowl, then use an electric whisk to whip on high until the mixture forms stiff peaks, 4-5 mins.
b) Reduce the whisk speed to medium, then slowly pour in the condensed milk until fully combined.
c) Increase the whisk speed back to high and continue to whip for a further 3-4 mins.
a) Pour the mixture into an appropriately sized container, then pop into the freezer until completely solid, 6-8 hours.
b) Meanwhile, peel and segment the orange. Pop the segments into a small bowl, cover, then set aside in the fridge.
c) Take the ice cream out of the freezer 10-15 mins before serving to soften slightly.
d) Scoop into bowls and top with the reserved orange segments to finish.
