Instructions

Pancake Timings
1

TIP: Your caterpillar can be as long as you want! We suggest making around 8-10 pancakes of different sizes.

a) For small pancakes (5cm wide), give your pancakes 60 secs in the pan on both sides. 

b) For medium pancakes (10cm wide), give your pancakes 60-90 secs on the first side and 60 secs on second side. 

c) For large pancakes (20cm wide), give your pancakes 90-120 secs on the first side, 60-90 on second side.

TIP: You will know when your pancake is ready to flip when bubbles start to form on the top and the edges look dry and set.

a) In a large bowl, combine the cake mix, eggs and water (see pantry for both amounts). Mix until smooth.

b) Heat a tablespoon of neutral oil (such as sunflower or vegetable oil) in a large frying pan on medium heat. TIP: You may need to add more oil after the first few pancakes to stop them from sticking to the pan.

a) Pour some of the pancake mixture into the pan using a ladle. Pour the mixture into the pan using small circular motions - the mixture should spread into an even circular shape, from the inside out. Stop pouring when the pancake is the width you want (see step 1) and 0.5cm thick. TIP: If your mixture has thickened a little while making the pancakes, add 1-2 tbsp of water and give it a good mix. 

b) Cook the pancake according to step 1's timings. Once the bottom of the pancake is golden, use a spatula to gently flip it.

c) Remove from the pan to a serving board and repeat with the remaining mixture.

a) To make your caterpillar, place a cooked pancake on the left side of your serving board. Pop another pancake to the right side of the first pancake, ensuring they overlap by at least half a pancake.

b) Continue placing more pancakes onto the platter to form a wavy line.

c) Place 2 blueberries on the furthest right pancake for the caterpillar's eyes, then pop a few blueberries in pairs along the bottom of the pancakes for their feet.

a) Snip off a small section from a corner of the red berry compote packet to create a small hole, then carefully pipe a smile underneath the eyes and 2 antenna on the top of the caterpillar's head.

TIP: Feel free to follow this guide or be creative and decorate your caterpillar however you like!

Finish and Serve

a) In a small saucepan, gently melt the white chocolate chips on medium heat, 3-4 mins.

b) Drizzle your pancakes with the maple syrup and melted white chocolate chips. 

c) Serve with any remaining blueberries and berry compote in bowls on the side.
