Italians are fiercely proud of their food. Add onions to a particular sauce or use the wrong shape of pasta and things can get a little crazy. But who can blame them? Fierce tradition has gifted them one of the best cuisines in the world. That’s why everyone got a little nervous when Patrick went and added grilled artichokes to a traditional Cacio e Pepe. This dish is little known outside of Rome, where you’ll see it on nearly every restaurant menu. We’re happy to say that rigorous taste testing amongst our Italian friends has so far gone rather well.
