Instructions

  • Preheat your oven to 240°C/220°C fan/gas mark 9.
  • Pop the sausages onto a baking tray.
  • When the oven is hot, roast on the top shelf until browned and cooked through, 12-14 mins. Turn halfway through. IMPORTANT: Wash your hands and equipment after handling raw meat. The sausages are cooked when no longer pink in the middle.

  • Meanwhile, heat a drizzle of oil in a large frying pan on high heat.
  •  When hot, add the mushrooms to the pan. Season with salt and pepper and fry, stirring occasionally, until browned, 5-6 mins.
  • Meanwhile, drain and rinse the black beans. 
  • Halve the ciabatta.

  • Once the mushrooms have browned, add the Central American style spice mix, passata, drained black beans, chicken stock paste, sugar and water (see pantry for both).
  • Simmer until thickened slightly, 3-4 mins. 
  • Once thickened, add the spinach and cook piping hot, 1-2 mins more.
  • Once cooked, remove the beans from the heat and stir in the BBQ sauce.
  • Taste and season with salt and pepper if you feel it needs it.

  • Pop the ciabatta into the oven to warm through, 2-3 mins.
  • When everything's ready, slice the sausages widthways.
  • Share smoky beans between serving bowls and top with the sausages. 
  • Serve the ciabatta alongside for dipping and scooping to finish.
