Tonight we wanted to give you time for a sunset stroll with this minimal fuss, multi-coloured taste of Italy. The key to this dish is gently roasting the cherry tomatoes and pepper to bring out their natural sweetness and then balance this against tangy olives and mild, creamy goat’s cheese. If your evening stroll happens to lead you to an ice-cream shop, nobody is judging!
