Today we are learning about umami… the word is derived from the Japanese “umai” (meaning “delicious”) and “mi” (meaning “taste”) and it is often described as “the fifth taste” (the other four being salty, sweet, bitter and sour). Umami is naturally occurring in many foods but the geniuses at Flavour 21 have made this mouthwatering umami paste to enhance the flavour of just about any savoury dish.
