  • Drain the halloumi, then cut it into 2cm chunks. 
  • Trim and halve the green beans. Halve, peel and thinly slice the onion.
  • Quarter the pear lengthways (no need to peel), remove the core and thinly slice lengthways/widthways.
  • Halve the ciabatta. Toast the ciabatta halves in your toaster until golden. Tear the ciabatta into bitesize croutons.

  • Heat a drizzle of oil in a large frying pan on medium-high heat.
  • Add the halloumi, beans and onion. Fry, 6-7 mins.

  • In a large bowl, combine the mayonnaise with the cider vinegar, mustard, honey and olive oil for the dressing (see pantry for both). Season with salt and pepper. 
  • Add the beans, halloumi, onion, croutons, pear and baby leaves to the dressing and toss to evenly coat.

  • Share the salad between bowls. Sprinkle over the flaked almonds to finish.
  • Enjoy!
