Truffle Zest
Preheat your oven to 200°C. Chop the potatoes into 2cm chunks (no need to peel!). Pop the chunks on a large baking tray in a single layer. Drizzle with oil, sprinkle on a pinch of salt, pepper and half the dried oregano. Toss to coat in the oil and seasonings then roast on the top shelf of your oven until golden, 25-30 mins. Turn halfway through cooking.
Meanwhile, slice the tomatoes into rounds. Trim the root from the baby gem lettuce then halve lengthways. Cut each half into three thin wedges. Roughly chop the capers. In a small bowl mix the mayonnaise with the capers and half the hard Italian cheese. Season with black pepper. Caesar dressing made!
Lay your chicken breast on the chopping board, place your hand flat on top and slice into it from the side (being careful not to slice all the way through). Open it up like a book. Repeat for the other breast(s). Season with salt, pepper and the remaining dried oregano. Use your hands to rub the flavours all over. IMPORTANT: Wash your hands after handling raw meat.
Heat a splash of oil in a large frying pan on high heat. When hot, lay in the chicken. Brown for 1-2 mins on each side. Lower the heat to medium and cook for 4-5 mins on each side. Turn every couple of mins. IMPORTANT: The chicken is cooked when no longer pink in the middle. When you lower the heat, add the bacon and fry, turning occasionally, until cooked to your liking. Transfer the chicken and bacon to a plate once cooked.
When the fries have 2mins left, remove from the oven and sprinkle on the remaining hard Italian cheese. Return to the middle shelf of the oven, for 2 mins to melt the cheese. Pop the ciabatta buns in at the same time to warm through. When everything is ready, slice the ciabattas in half and smear both sides with your caesar dressing.
Lay the sliced tomatoes on the bases and top with a chicken breast. Lay the bacon and baby gem wedges on top of the chicken and finish with the ciabatta lid. Pop a filled ciabatta on each plate. Sprinkle the truffle zest over your fries and serve the fries alongside your chicken sandwiches. Dig in!
