Dijon Mustard
Trim the root and the dark green leafy part from the leek. Halve lengthways then thinly slice. Peel and grate the garlic (or use a garlic press). Grate the cheddar.
Heat a drizzle of oil in a medium non stick frying pan (large if you are cooking for 4 people) on a medium high heat. When hot, add the leek and cook stirring occasionally until the leek is soft, 3-4 mins. Once cooked, add the garlic and cook stirring frequently for a further 1 minute.
In a medium bowl, combine the soured cream, eggs, grated cheese and season with salt and pepper. Whisk well to mix and pour into the pan with the leeks. Stir well to combine and turn the heat down to medium. Cover with a lid or tin foil and cook on the hob until the frittata is set all the way through, 12-15 mins. TIP: Check occasionally and if the sides of the pan are starting to colour too quickly turn the heat down a bit.
Trim and thinly slice the radishes. In medium bowl, combine the dijon mustard, honey, radishes and season with salt and pepper. Add the pea shoots. Set aside. Don't toss until ready to serve.
When the frittata is cooked, mix the salad to dress.
Once the frittata has cooked through, cut into slices and share between your plates. TIP: You can carefully flip it onto a chopping board or large plate first if you want to. Serve the salad along side. Enjoy!
