
Spice up your chicken thighs with Central American style spices, such as ground cumin, paprika, chilli flakes and thyme, for a tangy, smoky and spicy hit of flavour. Sandwich into a burger bun and serve with chunky potato wedges for a satisfying dinner.

Preheat your oven to 220°C/200°C fan/gas mark 7.
Chop the potatoes into 2cm wide wedges (no need to peel).
Pop the wedges onto a large baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.
When the oven is hot, roast on the top shelf until golden, 25-35 mins. Turn halfway through.

Meanwhile, cut the tomato into 2cm chunks.
In a medium bowl, combine the tomato, cider vinegar, sugar and olive oil for the dressing (see pantry for both amounts). Season with salt and pepper, then set aside.

Grate the cheese.

Heat a drizzle of oil in a large frying pan on medium-high heat.
Once hot, lay the chicken thighs flat in the pan. Season with salt and pepper and fry until browned on each side and cooked through, 13-15 mins. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh.
Turn every 2-3 mins. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. It's cooked when no longer pink in the middle.

Add the Central American style spice mix to the chicken for the last min of frying time.
Once the chicken thighs are cooked, remove the pan from the heat and sprinkle over the cheese. Cover with a lid or foil and leave until the cheese has melted, 3-4 mins.
Meanwhile, halve the burger buns. Pop them into the oven to warm through, 2-3 mins.

When everything's ready, add the rocket to the tomato bowl. Toss to coat in the dressing. Pop the chicken onto your board and cut each thigh into 3 or 4 pieces.
Spread the mayo (see pantry for amount) over the bun bases. Top the bases with the chicken and some salad, then sandwich shut with the bun lids.
Serve the wedges alongside.
