
Coated in cheesy spiced breadcrumbs, these cauliflower nuggets are perfect for dipping into sriracha mayo and sharing with friends and family. Prefer things milder? Just add less spice!

a) Preheat your oven to 220°C/200°C fan/gas mark 7.
b) Halve any large cauliflower florets. Pop the florets into a mixing bowl. Season with salt and pepper and stir in the grated hard Italian style cheese and half the mayonnaise. Make sure the florets are well coated.
c) In a small bowl, mix together the breadcrumbs with half the Central American style spice mix (add less if you'd prefer things milder).
d) Stir in the oil and salt for the breadcrumbs (see pantry for both amounts). TIP: Keep the remaining Central American spice mix for another recipe
a) Add the spiced crumbs to the bowl of florets and toss to coat evenly.
b) Pop the crumbed florets onto a lined baking tray and spread them out in a single layer. Discard any crumbs left in the bowl.
c) When the oven is hot, roast on the top shelf until golden and crispy, 20-25 mins.
d) Meanwhile, roughly chop the coriander (stalks and all).
a) Once roasted, sprinkle three quarters of the coriander over the cauliflower nuggets, season with salt, then toss to coat.
b) Pop the cauliflower nuggets onto a sharing dish. Drizzle over the remaining mayonnaise, then drizzle over the sriracha sauce.
c) Sprinkle over the remaining coriander to finish.

If you'd like to use an air fryer instead of the oven, preheat your air fryer to 200°C. Prepare the cauliflower nuggets as above.
Once hot, add the cauliflower nuggets to the basket. Bake until golden, 12-15 mins.
