  • Boil a half-full kettle.
  • Pour it into a saucepan with ¼ tsp salt on high heat.
  • Boil the rice, 10-12 mins.
  • Once cooked, drain, pop back in the pan and cover.

  • Meanwhile, heat a frying pan on medium-high heat (no oil).
  • Once hot, fry the mince, 5-6 mins. Break it up as it cooks, then drain the fat. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
  • Meanwhile, drain the sweetcorn.
  • Halve the lime.

  • In a large bowl, mix the sweetcorn, coleslaw mix, a good squeeze of lime juice and the mayo.
  • Season with salt and pepper.
  • Add the chicken stock paste, paprika, hot sauce, water, honey and butter (see pantry for all three amounts) to the beef. Fry 1-2 mins.
Dinner's Ready!

  • Share the rice between serving bowls.
  • Top with the buffalo style beef, corn slaw and rocket.
  • Drizzle some oil and squeeze some lime juice over the rocket leaves to finish.
