Preheat your oven to 220°C/200°C fan/gas mark 7.
Thinly slice the Brussels sprouts. Slice the THIS™ Isn't Bacon widthways into 1cm pieces.
Heat a large frying pan with a drizzle of oil. Once hot, add the sliced Brussels sprouts and the chopped THIS™ Isn't Bacon pieces. Cook for 5-6 mins, stirring occasionally. IMPORTANT: Ensure it's piping hot throughout.
Once cooked, remove from the heat.
Stir the honey through the Brussel sprouts and THIS™ Isn't Bacon in the frying pan.
Halve a filo pastry sheet to make squares, then cut both squares into quarters. Repeat this process until you have 16 small squares. Lay a filo square on a board, brush with a little oil, then lay another square on top at a slight angle. Repeat this process to make 8 parcels.
Divide the sprout and THIS™ Isn't Bacon filling between the pastry. Gather up the edges of each one and scrunch together to make your parcels.
Place the parcels on a baking tray and drizzle with oil. Roast on the middle shelf of the oven until the parcels are golden brown, 8-10 mins.
