Preheat your oven to 220°C/200°C fan/gas mark 7.

Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).

Pop the chips onto a large baking tray. Drizzle with oil, season with salt and pepper, sprinkle over half the peri peri, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.

When the oven is hot, bake on the top shelf until golden, 25-30 mins. Turn halfway through.

Roast the Wings

Meanwhile, lay the chicken wings onto a lined baking tray, skin-side up. Drizzle with oil, sprinkle over the remaining peri peri seasoning, then season with salt and pepper.

Roast the chicken on the middle shelf of your oven until cooked through, 25-28 mins. Turn halfway through. IMPORTANT: Ensure the chicken is piping hot throughout.

While everything cooks, trim the baby gem, halve lengthways, then thinly slice.

Trim the cucumber, then halve lengthways. Cut into 1cm thick half moons.

Make the Dressing

In a medium bowl, mix together the cider vinegar, sugar and olive oil for the dressing (see pantry for both amounts). Season with salt and pepper.

Final Touches

Once the chicken wings have roasted, add them to a large bowl and pour over the hot sauce and honey. TIP: If your honey has hardened, put the sachet in a bowl of hot water for 1 min to loosen.

Toss together to coat the wings. Season with salt and pepper.

Add the baby gem and cucumber to the cider vinegar dressing and toss together.

Share the chicken wings between your plates. Drizzle over the ranch dressing.

Serve the peri peri chips and baby gem salad alongside.
