Quick Pickled Cucumber Recipe
Ingredients: - 1 large cucumber (English or baby cucumbers work best), thinly sliced - 120ml white vinegar - 60ml water - 2 tablespoons caster sugar - 1 teaspoon fine sea salt - Optional: 1 clove of garlic (sliced) or a pinch of chilli flakes for extra flavour
Method: 1. Wash and thinly slice the cucumber. Place the slices in a clean jar or bowl. 2. In a small saucepan, combine the vinegar, water, sugar, and salt. Heat gently, stirring, until the sugar and salt have dissolved. Remove from heat and let cool slightly. 3. If using garlic or chilli flakes, add them to the jar with the cucumber slices. 4. Pour the pickling liquid over the cucumber slices, ensuring they are fully submerged. 5. Allow the cucumbers to cool to room temperature, then cover and refrigerate for at least 30 minutes. They will develop more flavour if left for a few hours or overnight.
