  • Prep and clean: Firstly, rinse your spring onions under cold water to remove any dirt. Pat them dry with a kitchen towel.
  • Trim: Trim off the root end (only the very end of the root, as all of the white bulb section is good to eat!), as well as the darker leaves at the top.
  • Slice: Lay your trimmed spring onion flat on your chopping board. Hold the spring onion firmly with one hand and use a sharp knife to slice into thin rounds, keeping your knife at a slight angle. Mimi Morley's top tip in spring onion preparation is to keep the slices uniform for even cooking!

Remember, don’t discard your dark green leaf trimmings. If desired, you can thinly slice them too, for a fresh, vibrant garnish – great for soups, salads, or stir fry recipes!
