a) Trim the carrot, then finely grate (no need to peel).
b) Place the grated carrot in a fine sieve over a large bowl and squeeze the carrot to remove some of the liquid, 1-2 mins. Discard the liquid.
c) Cut the dried apricots into small pieces.

a) Combine in a large bowl the grated carrot, dried apricot, instant oats, cashew butter, ground cinnamon, maple syrup and two thirds of the walnuts, then stir until evenly mixed. TIP: Get stuck in with your hands to get everything nicely combined.
b) Using your hands, form the mixture into bite-sized balls, using approximately 1 tbsp of mixture per ball. You will make approximately 12 cake bites.
c) Pop the cake bites onto a plate and into the fridge to firm up, 10-15 mins.

a) Meanwhile, fill a measuring jug with hot water from your tap. Place the unopened packet of white chocolate chips into the hot water and set aside for 5 mins. Then, flip the packet upside down and leave for a further 5 mins.
b) Carefully lift the packet out of the water and massage to ensure all the chocolate chips have melted. If there are still unmelted chips, return to hot water until completely melted.

a) Once melted, use kitchen scissors to snip off a small corner of the packet to create a small hole.
b) Drizzle the white chocolate over your cooled Carrot Cake Boost Bites.
c) Sprinkle the remaining walnuts on top of the white chocolate to finish.
TIP: Store your pop cakes in an airtight container in the fridge and consume within 3 days.
