a) If you don't have a toaster, preheat your oven to 220°C/200°C fan/gas mark 7 for the ciabattas. Halve the ciabattas.
b) If you're using the toaster, toast the ciabattas in your toaster until golden. If you're using the oven, pop them into the oven to warm through, 2-3 mins.

a) While the bread warms, grate the Cheddar cheese.
b) In a small bowl, mix together the pesto and mayo.

a) Spread the pesto mayo over the ciabatta lids and bases
b) Top the bases with the grated Cheddar.
c) Layer the Serrano ham slices on top of the cheese, then top with the rocket.
d) Sandwich on the lids and share between 2 plates to finish.
