Olive Oil for the Dressing

a) Halve the baby plum tomatoes.
b) Halve the avocados and remove the stones.
c) Use a tablespoon to scoop the flesh out onto a chopping board. Cut into 2cm chunks.

a) Cut the smoked salmon into small pieces.
b) Pop your fresh pesto into a small bowl and add the olive oil for the dressing (see pantry for amount).

a) Add your pea shoots, pumpkin seeds, tomatoes, salmon and avocado to your serving bowls.
b) When you're ready to serve, drizzle over the pesto dressing. Toss gently to coat in the dressing.
