Instructions

a) Preheat your oven to 200°C.

b) Drain and pull the mozzarella into small pieces.

c) Peel and grate the garlic (or use a garlic press) and pop into a small bowl with the oil (see ingredients for amount). Mix well.

a) Pop the baby pum tomtoes into a small bowl with the balsamic vinegar and a drizzle of oil.. Season with salt and pepper and mix well.

b) Pop the tomatoes onto a baking tray and roast on the top shelf of your oven until soft and starting to colour, 8-12 mins.

c) slice each ciabatta into 4 slices lengthways.

a) Evenly spread the garlic oil onto each ciabatta slice and bake on the top shelf of your oven until golden and crisp, 4-5 mins.

b) Using a fork, crush the tomatoes and spread across the toasted ciabatta slices.

c) Pop the mozarella onto each ciabatta and tear over the Serrano ham.

d) Sprinkle of the rocket and drizzle on the honey. Enjoy!
