Cooking Steps

  • Heat a drizzle of oil in a frying pan on high heat.
  • Once hot, fry the mince and mushrooms, 5-6 mins. Break up the mince as it cooks.
  • Once cooked, drain the fat from the mince. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.

  • Next, add the coleslaw mix. Stir-fry, 1-2 mins.
  • Add the udon to the pan. Toss to coat, using a fork to gently separate them.
  • Stir-fry, 1 min more.

  • Stir in the teriyaki, sambal, soy sauce, honey and water (see pantry). TIP: Put hardened honey into hot water for 1 min.
  • Toss to coat everything in the sauce.
  • Stir-fry, 1 min more. 
  • Taste and season with salt and pepper if needed.

  • Share the noodles between your serving bowls. 
  • Sprinkle over the peanuts to finish.
