There are certain foods which have suffered countless culinary injustices throughout the years. In our experience, the humble pork chop is a perennial victim of overcooking and is all too often tainted by (distant) memories of school dinners gone by. For perfect pork chops, there are three golden rules: i) make sure you source your meat from the best farm possible, ii) get your butcher to cut you a really thick, juicy chop and iii) use the right cooking technique.
