Sold by supermarkets in woefully thin slices, it’s little wonder that pork chops are often overcooked and have the succulence of a camel’s flip-flop. For this recipe, we ordered lovely, thick chops from our butcher and put them together with a silky smooth leek and potato mash. For the ultimate mash, our tip is to put the cooked potatoes into a wire sieve and push them through it with the back of a spoon instead of mashing. It’s a classic restaurant secret and the results merit the effort!
