Preheat your oven to 220°C/200°C fan/gas mark 7.
Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).
Pop the chips onto a large baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.
When the oven is hot, bake on the top shelf until golden, 25-30 mins. Turn halfway through.

Meanwhile, trim the cucumber, then halve lengthways. Cut into 1cm thick half moons.
Grate the Cheddar cheese.

Pop the baguette onto a baking tray and onto the middle shelf of your oven. Bake until toasted and golden, 10-12 mins.
Once baked, allow to cool, 5 mins.

While the baguette bakes, pop a large saucepan on medium-high heat (no oil).
Add the passata, chipotle paste (add less if you'd prefer things milder), red wine stock paste and sugar (see pantry for amount). Bring to the boil, then add the beef (and any juices from the packet). Season with salt and pepper.
Use a spoon to break up the beef as it cooks. Simmer until thickened, 4-5 mins. IMPORTANT: Ensure the beef is piping hot throughout.

When the chips have 10 mins remaining, sprinkle over half the cheese and scatter over the bacon lardons. Return to the oven and roast until golden, 8-10 mins. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
Meanwhile, slice the baguette in half lengthways. Spoon the beef chilli filling over the baguette and sprinkle on the remaining cheese.
Return to the middle shelf of the oven until melted, 5-6 mins.

When everything's ready, share the cheesy chilli hoagie between your serving plates.
Serve the cheesy bacon chips and baby leaves alongside.
Scatter the cucumber over the baby leaves, then drizzle on the balsamic glaze and some oil to finish.
