
Crispy on the outside, tender on the inside and delicious all the way through, these Southern Fried Chicken Nugget Bites are extra tasty when dipped into homemade baconnaise dip.

Salt for the Breadcrumbs

a) Heat a drizzle of oil in a medium frying pan on medium-high heat.
b) Once hot, add the bacon lardons. Stir-fry until golden, 4-5 mins.
c) Once cooked, remove the pan from the heat and stir in the smoked paprika. Transfer to a small bowl and allow to cool. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.

a) Meanwhile, crack the egg (see pantry for amount) into a bowl and whisk.
b) In another bowl, combine the breadcrumbs, Central American style spice mix and the salt for the breadcrumbs (see pantry for amount).

a) Slice the chicken breasts widthways into 2cm thin strips. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh.
b) Season the chicken, then dip into the egg and then the breadcrumbs, ensuring it's completely coated.
c) Transfer to a clean plate. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging and discard any excess egg.

a) Wipe out the (now empty) bacon frying pan and pop it back on high heat.
b) Add enough oil to completely coat the bottom of the pan. TIP: You want the oil to be hot so the chicken fries properly - heat for 2-3 mins before you add the chicken.
c) Once hot, lay in the chicken. Cook until golden brown, 3-4 mins each side. Adjust the heat if necessary. IMPORTANT: The chicken is cooked when no longer pink in the middle.

a) While the chicken fries, add the mayonnaise to the bacon lardons and stir together.
b) Finely chop the chives (use scissors if easier) and stir half into the baconnaise, then set aside.
c) Once cooked, transfer the chicken to a clean plate lined with kitchen paper.

a) Pop the southern fried chicken nugget bites into a serving dish and sprinkle over the remaining chives.
b) Serve the baconnaise in a small bowl alongside for dipping.
