Cooking Steps

Preheat your oven to 200 degrees. Chop the potatoes into 2cm wide wedges (no need to peel!). Pop on a large baking tray, drizzle with oil and season with salt and pepper. Toss to coat then spread out in one layer and roast in your oven until golden, 30-35 mins. Turn halfway through cooking.

Slice the halloumi into 2 slices per person. Cut the lemon in half. Trim the root from the baby gem lettuce then half lengthways. Thinly slice widthwaysThinly slice half the tomato and keep to one side. Chop the remaining tomato into 2cm chunks and pop into a large bowl along with the lettuce. Set aside.

Slice lengthways into the avocado. Once you reach the stone turn the avocado around to cut it in half. Twist each half and pull it apart. Remove the stone then scoop out the insides  into a mixing bowl. Add a little squeeze of lemon juice and a pinch of salt and pepper. Mash it all together with a fork (it doesn't have to be completely smooth), taste, then add a little more lemon juice if necessary. This is your guacamole!

Heat a drizzle of oil in a large frying pan on medium-high heat. When hot, lay in the halloumi slices and fry until golden brown, 3-4 mins on each side. Meanwhile, add a squeeze of lemon juice  and a drizzle of oil to the salad and season with a good pinch of salt and pepper. Cut the burger buns in half.

When the potatoes have 3-4 mins left, pop the buns directly onto the middle shelf of the oven to warm through and toast slightly. Remove the halloumi pan from the heat and drizzle in half the sweet chilli sauce. Carefully turn the halloumi slices to coat them in the chilli sauce.

To assemble the burgers, spread a good dollop of the guacamole on the base of each bun, then top with the halloumi and tomato slices. Drizzle with a little of the remaining sweet chilli sauce then pop the bun lid on top. Serve with wedges and salad alongside. Enjoy!
