a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once the oil is hot, add the chicken to the pan and season with salt and pepper.
c) Fry until golden brown on the outside and cooked through, 8-10 mins.
d) IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.
e) The chicken is cooked when no longer pink in the middle.
f) Once the chicken is cooked, pop aside to cool, 5-10 mins.
a) Meanwhile, put the mayo into a bowl and add the chipotle (see ingredients for amount). Careful, the chipotle is hot - add less if you don't like heat. Mix together.
b) Halve the burger bun and spread half the chipotle mayo on the cut sides of the roll.
a) Trim the root from the baby gem lettuce then separate the leaves.
b) Thinly slice the Cheddar cheese.
c) Toss the cooked chicken in the remaining chipotle mayo.
a) Pop a couple of baby gem leaves on the base of the roll (use as much or as little as you like).
b) Spread the mayo chicken on top and then follow with the cheese.
c) Sandwich together and tuck in.
