Instructions

Preheat your oven to 220°C/200°C fan/gas mark 7.

Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).

Pop the chips onto a large baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.

When the oven is hot, bake on the top shelf until golden, 25-30 mins. Turn halfway through.

Meanwhile, pop the sausages onto a baking tray and bake on the middle shelf until golden brown and cooked through, 20-25 mins.

Turn halfway through. IMPORTANT: Wash your hands and equipment after handling raw meat. The sausages are cooked when no longer pink in the middle.

Slice the buns down through the middle (but not all the way through).

In a small bowl, mix together the sriracha and honey to make your hot honey glaze.

Just before everything's ready, pop the buns onto a baking tray and into the oven to warm through, 2-3 mins.

Pop the buns onto your plates, spread the ranch in the buns and fill with the sausages. Drizzle over the hot honey sauce.

Serve the rocket and chips alongside. Drizzle the balsamic glaze over the rocket and serve the chips with ketchup (see pantry for amount) for dipping.
