- Heat a drizzle of oil in a saucepan on medium-high heat.
- Add the pepper and sausage meat and fry until browned, 4-5 mins. Use a spoon to break it up into equal-sized large chunks, roughly 6 per person. , then drain and discard any excess fat. IMPORTANT: Wash hands and utensils after handling raw meat.
- Add the passata, dried basil, chicken stock paste, water and sugar for the sauce (see pantry for both amounts).
- Bring to the boil then lower the heat.
- Add the ditali pasta and simmer until tender and the sausage is cooked, 10-12 mins. IMPORTANT: Cook the sausage meat so there's no pink in the middle.
- Next, add the spinach to the pan until wilted and piping hot, 1 min.

Review summary
Updated on Aug 2026- Flavour: A rich, warming soup that consistently wins over families, with a well-balanced tomato base and satisfying depth of flavour.
- Ease of prep: A straightforward one-pot cook that comes together quickly, making it a great choice for busy weeknights or cooking with children.
- Suggestions: Reduce the water slightly for a thicker, more stew-like consistency; adding cannellini beans, celery, or onion can make it more hearty. Serving with garlic toast or a bread roll works well for dipping.
- Next-day meals: Leftovers keep well, and the dish lends itself to batch cooking; one reviewer noted it was still tasty a week later with kidney beans and fresh herbs added.
- Portions: Several reviewers found the portion on the smaller side for two adults, and suggest adding extra pasta or vegetables to bulk it out.
