a) Trim and halve the carrot lengthways (no need to peel). Slice widthways into ½cm thick half moons.

b) Halve, peel and thinly slice the onion.

c) Peel and grate the garlic (or use a garlic press).

a) Heat a drizzle of oil in a large saucepan on medium-high heat. 

b) Once hot, add the onion and carrot. Season with salt and pepper and fry, stirring occasionally, until golden and softened, 6-8 mins.

c) Meanwhile, boil a half-full kettle.

a) Once softened, add the orzo and garlic. Cook, 1 min, stirring.

b) Add the chicken stock paste, creme fraiche, pesto and boiled water (see pantry).

c) Turn the heat up to high and bring back to the boil, stirring regularly to ensure the orzo doesn't stick. Add a splash more water if needed.

d) Reduce to a simmer on medium heat and cook until the orzo is just tender and the sauce is thick and creamy, 10-14 mins.

a) While the pasta is cooking, heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once hot, lay the chicken thighs flat in the pan and sprinkle over the mixed herbs. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh. Season with salt and pepper and fry until browned on each side and cooked through, 13-15 mins. 

c) Turn every 2-3 mins. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. It's cooked when no longer pink in the middle.

a) While everything's cooking, mix the chilli flakes and olive oil (see pantry for amount) in a small bowl. Season with a pinch of salt

b) Once the pasta is cooked, taste and season with salt and pepper if you feel it needs it. Add a splash of water if the sauce looks a little thick.

Serve Up

a) When everything's ready, share the orzotto between serving bowls and top with the herby chicken

b) Elevate me: Drizzle the chilli oil over the adult portions (add less if you'd prefer things milder) and serve a handful of rocket for those who'd like. Drizzle a little olive oil over the leaves to finish.
