Instructions

Into the Oven
1

a) Preheat your oven to 220°C/200°C fan/gas mark 7.

b) Trim the bottom 2cm from the asparagus and discard.

c) Pop the asparagus and bacon lardons onto a baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer.

d) When the oven is hot, roast on the top shelf until tender, 12-15 mins.

Prep the Breadcrumb Topping

a) Peel and grate the garlic (or use a garlic press).

b) In a small bowl, combine the garlic, grated hard Italian style cheese, breadcrumbs, mixed herbs and olive oil (see pantry for amount).

Finish and Serve

a) When the asparagus and bacon have been in the oven for 2-5 mins, sprinkle over the cheesy herby breadcrumbs and return to the oven for the remaining time, until crispy and golden.

b) Once baked, transfer to your serving dish to finish.
