Instructions

Fry the Bacon

Preheat your oven to 220°C/200°C fan/gas mark 7. 

Heat a drizzle of oil in a large frying pan on medium-high heat.

When hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.

Warm the Pancakes

While the bacon cooks, pop the pancakes onto a baking tray and into the oven to warm through, 2-3 mins.

When the bacon is cooked, transfer it to a plate lined with kitchen paper.

Once the kitchen paper has soaked up some of the cooking juices, remove the kitchen paper from the plate, then drizzle over half the honey and turn the bacon in it so it's nicely coated. TIP: If your honey has hardened, pop it in a bowl of hot water for 1 min.

Cover to keep warm.

Swirl the Compote

When the pancakes have warmed through, start to build your stack!

Equally share the creme fraiche between all the pancakes, then dollop the red berry compote onto each. Using a teaspoon, gently swirl the creme fraiche and compote until ripples form. TIP: You don't want to mix them together completely, so be gentle.

Scatter the Blueberries

Scatter some blueberries over each pancake, then stack one onto another, creating a stack of 2 (1 stack per person).

Finish and Serve

Next, arrange the honey coated bacon on top.

Finally, scatter over the toasted almonds and drizzle over the remaining honey. Pancake heaven! Enjoy.
